Sam's Bakery opened its doors on Ellis Street with one simple belief: the best bread starts with patience, good flour, and a whole lot of love. What began as a weekend passion project has grown into a beloved San Francisco institution.

Every loaf is built on our 12-year-old sourdough starter, fed daily and proofed slowly. We mill our own flour blends with local California grains, and our pastries are laminated by hand before dawn — so the smell drifting down Ellis Street is pure, unfiltered morning.
